Shrimp Scampi Pizza

INGREDIENTS
- Garlic Shallot Butter
- 5 TBSP butter
- 1/4 C minced shallot
- 2 TBSP minced garlic
- 1/2 tsp dried thyme
- 1/4 tsp salt
- 1 pinch white pepper
- 1/3 C Chardonnay wine
- 1 TBSP lemon juice
- 1 tsp chicken base or bouillon cube
- Roasted Garlic
- 1/3 C coarsely chopped garlic
- 1/2 tsp olive oil
- Pizza
- 1 recipe pizza dough
- 1 1/2 C shredded mozzarella cheese (Italian blend is good)
- 1/4 white onion, sliced into 1/8 inch rings
- 12 medium shrimp,peeled, deveined and cut in half lengthwise
- 2 tsp oregano
- 2 TBSP chopped Italian parsley
DIRECTIONS
- Garlic Shallot Butter:
- melt 1 TBSP butter in a nonstick pan over medium high heat.
- Add wine, shallot, garlic and thyme.
- Cook, stirring until mixture is reduced to about 1/2 C (reduce heat and stir more frequently as it gets closer to being done)
- Remove from burner, quickly and thoroughly whisk in remaining 4 TBSP butter.
- Roasted Garlic:
- Preheat oven to 325
- Coat the coarsley chopped garlic with oil
- Spread pieces of garlic over the surface of a glass casserole or sheet pan
- Roast in preheated oven for 12 minutes, toss and roast another 12 minutes.
- Remove from oven and set aside.
- Pizza:
- Preheat oven to 425
- Prepare dough
- Spread garlic shallot butter over dough
- Spread the cheese over the butter sauce
- evenly distribute the onions and roasted garlic over the cheese
- Place shrimp, skin side up over the cheese and toppings
- Bake until crust is crispy and cheese is bubbly, about 15 minutes.
- Sprinkle oregano and parsley over cooked pizza.
