Smoked Turkey Asparagus Salad
  • Servings: 4
  • 1/2 lb. asparagus, cut into 2" pieces
  • 2 cups sliced strawberries
  • 1-1/2 cups cubed smoke turkey breast
  • 8 oz. can pineapple tidbits, drained, reserving liquid
  • 2 Tbsp. honey
  • 1/8 tsp. salt
  • dash white pepper
  1. Cook asparagus in rapidly boiling water for 3-5 minutes or until crisp tender. Drain and rinse with cold water. Combine with strawberries, turkey and drained pineapple tidbits.
  2. In small bowl, combine 1/4 cup reserved pineapple liquid with honey, salt, and pepper and mix well. Pour over salad and toss gently. Serves 4
