Sour Cream Raisin Bars

INGREDIENTS
  • crust:
  • 1 1/4 C. oleo (I like real butter!)
  • 1 C. brown sugar
  • 2 1/2 C. flour
  • 2 1/2 C. quick oats
  • 1 tsp baking powder
  • 1 tsp soda
  • 1/8 tsp salt
  • filling:
  • 4 egg yolks
  • 1 cup sugar
  • 2 cups raisins
  • 2 TBS (powdered unflavored gelatin)
  • 2 C. sour cream
DIRECTIONS
  1. For the crust - Cream butter and brown sugar, beat in rest of ingredients. Mixture should be crumbly. Set aside 2 cups of the crumbs and press the rest in a 9x13 pan. Bake 350 deg for 15 min. Then let cool
  2. For the filling - Mix all ingredients in sauce pan and bring to a boil. Cook, stirring constantly for 5-8 minutes and pour over crust. Sprinkle with reserved crumbs. Return to oven for 15 min. Cool before cutting into bars.
