Southwest Chicken - Slow Cooker

INGREDIENTS
  • 3 Chicken Breasts
  • 1 Can Garbanzo Beans
  • 1 Can Corn
  • 1 Can Black Beans
  • 1 Can Chunky Salsa
  • 1 Hot Chile Pepper
  • 10 Green Olives (sliced)
  • 1 tsp. Lime Juice
  • 2 cloves minced garlic
  • 1 Package of Sazon (International aisle of grocery store. If unavailable, 1 tsp Ground Cumin)
  • 1 pkg cream cheese - cubed
  • Toppers:
  • Shredded Cheese
  • Sour Cream
  • Serve atop:
  • Cooked Rice
DIRECTIONS
  1. Place all ingredients except cream cheese, toppers and rice into slow cooker. Cook on high for 2-3 hours, or on low for 4-6 hours. If you choose, remove chicken, and cut into cubes. Replace chicken into slow cooker. Add cream cheese. Stir. Cook until cream cheese melts.
  2. Serve over rice. Top with shredded cheese and sour cream.
