Special Apple Cheesecake
INGREDIENTS

  • Crust: 1 and one half cups graham cracker crumbs (about 20 crackers)
  • one-third cup melted butter
  • 3 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • one-fourth teaspoon cinnamon
  • one-fourth teaspoon nutmeg
  • one-fourth teaspoon allspice
  • 4 Tablespoons butter
  • 6 firm baking apples, peeled, cored and cut into thick slices
  • 3 tablespoons sugar
  • one-fourth teaspoon cinnamon
  • one-fourth teaspoon nutmeg
  • one-fourth teaspoon allspice
  • 2 8-ounce packages cream cheese, softened
  • one half cup of sugar
  • 4 eggs
  • one half teaspoon vanilla
  • grated rind of half a lemon
DIRECTIONS
  1. Mix together first 7 ingredients, and press into a 9 inch springform pan. Melt butter in a large heavy saucepan. Add apples, sugar and spices and saute over low heat until apples start to brown (about 20 minutes). Preheat oven to 325 degrees. Beat cream cheese with next 4 ingredients. Pile apples into crust and cover with cheese mixture. Bake 50 to 55 minutes. Turn off oven, open door and leave cake in oven for 45 minutes. Remove, and chill. Garnish serving plate with bunches of green and/or red seedless grapes.
