Speedy Cheesecake Pie

INGREDIENTS
  • 1 pkg. (8oz.) cream cheese
  • 1/2 cup sugar
  • 1 TB lemon juice
  • 1/2 tsp vanilla
  • dash salt
  • 2 eggs
  • 1 cup sour cream
  • 2 TB sugar
  • 1/2 tsp vanilla
  • 1 8-inch graham cracker crust
DIRECTIONS
  1. Beat cream cheese until fluffy, gradually blend in 1/2 cup sugar, lemon juice, 1/2 teaspoon vanilla and salt.
  2. Add eggs one at a time, beating well after each. Pour filling into crust.
  3. Bake at 350 degrees for 25 to 30 minutes or until set.
  4. Mix sour cream, 2 Tablespoons sugar and 1/2 teaspoon vanilla and spoon over top of pie.
  5. Bake 10 minutes.
  6. Cool, then chill for several hours.
