Stir-fry Chicken
INGREDIENTS
- 2 tsp vegetable oil, divided
- 1 tsp sesame oil, divided
- 1 1/2 Tbsp ginger root, finely chopped (I use the ground ginger)
- 3 or so garlic cloves minced/pressed
- 1 pound skinless, boneless, chicken breast, cut into bite size pieces
- 1-2 coloured pepper, chopped (red/orange/yellow) {I usually use 2 peppers}
- 2 cups of chopped broccoli
- 2 Tbsp low-sodium soy sauce
- Approx. 20 cashews, roasted, unsalted, roughly chopped
DIRECTIONS
- Heat a large nonstick skillet over high heat.
- Add 1 tsp of vegetable oil, 1/2 tsp of sesame oil, ginger and garlic; cook 15 seconds.
- Add chicken and stir-fry until starting to brown, about 3 to 4 minutes; remove to a plate.
- Add reamining tsp of vegetable oil, pepper and broccoli to same skillet and stir-fry for 3 minutes.
- Add chicken back to skillet, pour in soy sauce and cook, stirring, until chicken is cooked trough, about 2 minutes more.
- Toss with remaining 1/2 tsp of sesame oil.
- Sprinkle on cashews and serve.
- I also serve this over brown rice that I have cooked in chicken broth, and just add a little more soy sauce to the rice.
