Stovetop meatloaf

  • 1 can tomato soup
  • 1 1/2lb ground beef
  • 1/2 cup fine dry bread crumbs
  • 1 egg
  • 1/3 cup finely chopped onion
  • 1/2 to 1 tsp horseradish
  • 1 tsp salt
  • Generous dash pepper
  • 1 tbs shortening
  • 1/4 cup water
DIRECTIONS
  1. Mix thoroughly 1/2 can soup, beef, bread crumbs, egg, onion, salt and pepper
  2. Shape firmly into 2 loaves
  3. In skillet brown on both sides in shortening
  4. Cover, cook over low heat for 25 minutes
  5. Spoon off fat
  6. Top with remaining soup, water and horseradish
  7. Cook uncovered 10 minutes
  8. Oven method:
  9. Place loaves in shallow baking pan
  10. Bake at 350 for 40 minutes
  11. Top with remaining soup (omit water) and horseradish
  12. Bake 5 minutes more or until done
  13. Cream of mushroom or tomato rice soup may be substituted
