Strawberry Shortcake Cups

  • 1 quart fresh strawberries
  • 4 tbsp sugar, divided
  • 1 1/2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup cold butter, cubed
  • 1 egg
  • 1/2 cup milk
  • Whipped Cream
DIRECTIONS
  1. Mash or slice the strawberries
  2. Place in a large bowl
  3. Add two tablespoons of the sugar
  4. Set aside
  5. In another bowl, combine the flour, baking powder, salt, and the remaining sugar
  6. Cut in the butter until crumbly
  7. In a small bowl, beat the egg and milk
  8. Stir into the flour mixture just until moistened
  9. Fill the eight greased muffin cups two-thirds full
  10. Bake at 425 for 12 minutes or until golden
  11. Remove from the pan to cool on a wire rack
  12. Just before serving, split the shortcakes in half horizontally
  13. Spoon the berries and whipped cream between the layers and over the top
