Stuffed Acorn Squash

INGREDIENTS
  • 1 Acorn squash (Cut in half, remove seeds and a bit more)
  • 2 Med Portabella mushroom sm dice, remove black
  • 3 Garlic clove Minced
  • 1/2 Yellow onion, large, small dice
  • 3 tbs Olive oil
  • 4 Strips of turkey bacon or your choice bacon diced
  • 3 tbs Feta cheese or 1 tbs Parm.
  • S&P to taste
DIRECTIONS
  1. Make a bigger dip in squash then seed area
  2. Rub outside with olive oil
  3. Place rimed bake sheet in oven at 350 degrees
  4. Fill 3/4 water with squash cut side down
  5. 20 minutes or until very tender
  6. Remove from heat
  7. Place 3 tablespoons olive oil in Sauté pan. Heat until smoking
  8. Add garlic and bacon Cook until tender
  9. Salt and pepper to taste
  10. Remove from heat and add cheese
  11. Fill squash with mixture and bake on dry bake sheet for 10 to 15 minutes at 350°
