Summer Sausage

INGREDIENTS
  • 5 lb Hamburger, Don't use too lean or it will be rubbery
  • 1 1/2 tsp Dry Mustard
  • 1/4 cup Morten's Tender Quick
  • 2 tsp Garlic Powder
  • 1/2 tsp Sage
  • 1 tsp Cayenne Pepper
  • 1 1/2 tsp Black Pepper
  • 1 Tbsp Liquid Smoke
DIRECTIONS
  1. Oven Temperature: 150-200°F
  2. *Mix well by hand, cover tightly, and refrigerate 4 days
  3. *Mix again by hand 2nd and 3rd day
  4. *On the 4th day roll into 4 or 5 rolls
  5. *Place on broiler pan with rack on bottom of rack of oven
  6. *Bake at 150-200 degrees for 8 hours; turn 1/4 turn every 2 hours
