Sun-Dried Tomato and Chevre Spread (Moosewood Restaurant New Classics)
INGREDIENTS
  • 1/3 c sun-dried tomatoes
  • 1c soft chevre (or combination of goat cheese and cream cheese)
  • 1T fresh chopped thyme (1t dried)
  • 2t freshly grated lemon peel
  • 1/2 t cracked peppercorns
  • 3-4 T milk
DIRECTIONS
  1. 1. In small heat-proof bowl, cover sun dried tomatoes with boiling water and set aside to soften ~ 15 minutes.
  2. 2. Meanwhile, in medium bowl, combine chevre, thyme, lemon peel, cracked peppercorns, and enough milk to make smooth spread. Drain and chop sun-dried tomatoes and mix them into cheese.
  3. 3. Serve immediately or refrigerate and bring to room temperature before serving.
