Sunshine Citrus Salad

  • Basic Ingredients
  • 2 cups spinach
  • 2 oranges
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts
  • 2 Tbsp olive oil
  • Juice from half of an orange
  • Cayenee pepper
  • Pressed ginger
  • Add on - thin slices, shred or julianne
  • Red bell pepper
  • Jicama
  • Carrot
  • Zucchini
  • Pumpkin Seeds
  • Hemp Hearts
  1. Layer a wide serving salad bowl, starting with the spinach on the bottom.
  2. Chop, slice or shred your ingredients and arrange on top of the spinach.
  3. Mix the orange juice, oil, cayenne pepper and ginger and pour over your salad.
  4. Place the bowl in your dehydrator at 115 F for half an hour.
  5. Salad should be warm, spinach will be wilted and your palate will be delighted.
This salad is a favorite of mine. It's easy to prepare, warms you up on a cold day and satisfies your tummy in every way. The recipe is a guide, the variations are endless. I've listed the basic ingredients and some add on's. Mix and match as you please.
