Sweet Potato Frys and Garlic Aioli

- Sweet Potato Frys
- 5 medium potatoes
- 1 sweet potato
- olive oil
- fresh rosemary, chopped
- salt and pepper
- Garlic Aioli
- 2 small garlic cloves, minced
- juice of half a lemon
- 2 Tablespoons chopped Italian parsley
- 1/2 cup mayonnaise (You can make homemade mayonnaise. I did not).
- salt and pepper
DIRECTIONS
- Sweet Potato Frys
- Preheat the oven to 425 degrees.
- Wash the potatoes and cut into fours length-wise so they look like big fat french fries. Toss in a bowl with the olive oil and rosemary. Spread on the baking sheet and season liberally with salt and pepper. Cook for one hour, flipping the potatoes with a spatula every twenty minutes or so.
- Garlic Aioli
- Mix everything up in a little bowl. Serve with fries.
