Sweet Potato Souffle
INGREDIENTS
  • Cooking Time: 35-45
  • Servings: 9
  • Preparation Time: 30
  • Filling:
  • 4 c mashed sweet potatoes (1 inch cubes, steamed/boiled for 20 min or till fork tender)
  • 1 c sugar (I go a bit light on the sugar, I'd say to taste)
  • 2 eggs
  • 1/2 c milk
  • 1/2 t salt
  • 1/3 c butter melted (I go a bit light on this too- have even left it out, no big deal)
  • 1 t vanilla
  • Topping:
  • 1 c brown sugar
  • 1/2 c flour
  • 1/3 c butter (NOT melted)
  • 1 c pecans, roughly chopped
DIRECTIONS
  1. For the filing:
  2. Mix all ingredients well and pour in pan sprayed with nonstick spray
  3. For the topping:
  4. Stir all dry ingredients together with fork
  5. Cut in butter until the mixture is well incorporated
  6. Crumble topping evenly over filling mixture
  7. Bake uncovered at 350 degrees for 35-45 minutes
