Sweet Potato Souffle

- Filling:
- 4 c mashed sweet potatoes (1 inch cubes, steamed/boiled for 20 min or till fork tender)
- 1 c sugar (I go a bit light on the sugar, I'd say to taste)
- 2 eggs
- 1/2 c milk
- 1/2 t salt
- 1/3 c butter melted (I go a bit light on this too- have even left it out, no big deal)
- 1 t vanilla
- Topping:
- 1 c brown sugar
- 1/2 c flour
- 1/3 c butter (NOT melted)
- 1 c pecans, roughly chopped
DIRECTIONS
- For the filing:
- Mix all ingredients well and pour in pan sprayed with nonstick spray
- For the topping:
- Stir all dry ingredients together with fork
- Cut in butter until the mixture is well incorporated
- Crumble topping evenly over filling mixture
- Bake uncovered at 350 degrees for 35-45 minutes
