Sweet Zucchini Bread

INGREDIENTS
  • 1 c. flour
  • 1 c. sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 2 eggs
  • 1/2 c (I use Canola) oil
  • 1 tsp vanilla
  • 1 c unpeeled zucchini-grated
  • 1 and 1/2 c raisins
DIRECTIONS
  1. Combine dry ingredients
  2. beat eggs, oil and vanilla, add the dry and beat until combined, (do not overbeat) last beat in the zucchini and raisins.
  3. Pour into a large greased and floured loaf pan and bake at 350 for about 50 minutes or until center is dry

A wonderful way to make use of zucchini when they start to pop faster than they can be eaten. Freezes well, too.
