Sweet-and-Sour Appetizer Meatballs

  • 1 egg, slightly beaten
  • 1/2 cup cooked rice
  • 1/3 cup finely chopped onion (1 small)
  • 1/4 cup fine dry bread crumbs
  • 2 teaspoons brown sugar
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound lean ground beef
  • 1 teaspoon lemon juice
  • 1 cup ketchup
  • 1 cup grape jelly
  • 1/4 cup raisins
DIRECTIONS
  1. In a large bowl combine egg, cooked rice, onion, bread crumbs, brown sugar, 1 tsp. lemon juice, garlic powder, salt, and pepper. Add ground beef; mix well.
  2. Shape into forty 1-inch meatballs.
  3. Arrange meatballs in a 15x10x1-inch baking pan.
  4. Bake in a 350° oven for 15 to 20 minutes or until done (160°F).
  5. Drain off fat.
  6. Transfer meatballs to a large serving bowl.
  7. Meanwhile, for sauce, in a medium saucepan combine 1 tsp. lemon juice, ketchup, jelly, and raisins.
  8. Bring to boiling; reduce heat.
  9. Simmer, uncovered, for 10 minutes, stirring occasionally.
  10. Pour sauce over meatballs; toss gently to coat.
