Sweet and Sour Meatballs
INGREDIENTS

  • 1 pound lean ground beef
  • 2 Tbsp fine, dry breadcrumbs
  • 1 Tbsp skim milk
  • 1/2 tsp pepper
  • 1/4 tsp salt
  • 1/8 tsp dried whole thyme
  • 1/8 tsp ground cinnamon
  • Dash of ground red pepper
  • 1 clove garlic, minced
  • Vegetable cooking spray
  • 1/2 cup chopped onion
  • 1 (10.75 oz) can tomato puree
  • 1/2 cup unsweetened pineapple juice
  • 2 Tbsp red wine vinegar
  • 2 Tbsp lemon juice
  • 1 tsp Worcestershire sauce
DIRECTIONS
  1. Combine first 9 ingredients; mix well. Shape into 48 meatballs, using 1 ½ tsp mixture for each meatball. Arrange on rack of a broiler pan coated with cooking spray. Bake at 400 degrees for 10 minutes or until browned. Set aside.
  2. Coat a Dutch oven with cooking spray; place over medium heat until thoroughly heated. Add onion and sauté until tender. Add tomato puree, pineapple juice, vinegar, lemon juice and Worcestershire sauce. Add meatballs; cover and simmer over low heat for 20 minutes. Serve hot.
