Sweet and Sour Red Cabbage

  • 1/4 cup butter
  • 1 2lb red cabbage thinly sliced (approx 12 cups)
  • 6 tbsp sugar
  • 2/3 cup balsamic vinegar
  • Salt
  • Pepper
DIRECTIONS
  1. Melt butter in a large pot over medium heat
  2. Add cabbage and sauté until slightly wilted, about 5 minutes
  3. Add sugar, toss to coat evenly
  4. Add vinegar and reduce heat to medium low
  5. Cover, simmer 30 minutes, stirring often, cabbage should be tender
  6. Season to taste with salt and pepper
