• 1/2 cup long grain white rice
  • 3 cups milk (approximately)
  • 1 egg
  • 3/4 cup brown sugar
  • 3/4 tsp. nutmeg
  • 1 1/4 tsp. vanilla
  • pinch of salt
  • unbaked 9 inch pie shell
  1. Put the rice and 2 1/2 cups of the milk in the top of a double boiler and cook, covered, until rice is tender, about 1 hour.
  2. You’ll probably, but not necessarily, have to add another 1/2 cup of milk.
  3. The mixture should not be sloppy , nor should it be too stiff.
  4. Preheat ove to 375 degrees.
  5. In a bowl, beat the egg with a fork, add sugar, nutmeg, vanilla and salt and mix well.
  6. Pour into cooked rice and mix.
  7. Pour into an unbaked pie shell and bake until set, about 40 minutes, or until crust is lightly browned.
This is a very tasty pie. If you like rice pudding you will like this.
