Texas Caviar

INGREDIENTS
  • 1/2 REd Onion
  • 1 Green Bell Pepper
  • 1 Bunch Green Onions
  • 2 Chopped JalapeƱos
  • 1 Tbsp. Minced Garlic
  • 1 Pint Cherry Tomatoes, Quartered
  • 1 (15oz) can of Black Beans Drained
  • 1 (15oz) can of Black Eyed Peas Drained
  • 1/2 tsp. Coriander
  • 2 Cups of Frozen Sweet Corn
  • 1 Bunch Chopped Fresh Cilantro
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons kosher salt
  • Juice of 1 lime
DIRECTIONS
  1. In a large bowl, mix all ingredients (except cilantro) together.
  2. Cover and chill in the refrigerator approximately 2 hours.
  3. Toss with desired amount of fresh cilantro to serve.
