The Best Barbecued Beef

  • 1 tbsp butter or margarine
  • 1 cup onion, chopped
  • 3/12 lb. boneless chuck roast
  • 1 1/2 cups ketchup
  • 1/4 cup packed brown sugar
  • 1/4 cup red wine vinegar
  • 2 tbsp Dijon mustard
  • 2 tbsp Worcestershire sauce
  • 1 tsp Liquid Smoke
  • 1/2 tsp garlic salt
DIRECTIONS
  1. Melt the butter in a skillet over medium heat.
  2. Add the onion and cook until it is translucent; set aside.
  3. Place the chuck roast in a slow cooker.
  4. In a large bowl, combine the remaining ingredients, and blend well.
  5. Add the onion to the sauce.
  6. Pour the barbecue sauce over the chuck roast.
  7. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours.
  8. Remove meat from slow cooker and shred with fork.
  9. Return to the slow cooker and mix with sauce.
