Tomato pie
INGREDIENTS
  • 1 9" deep unbaken pie crust
  • 1 tbs sharp mustard (Dyon)
  • 5 ripe tomatoes peeled and sliced
  • 2 c pecorino cheese shredded
  • 1/2 c fresh basil leaves
  • 1 ts dried oregano or 1 tbs fresh
  • 2 tbs parsley chopped
  • 3 spring onions thinly sliced
  • 2 tbs olive oil
  • 6 drops of tabasco
  • 2 eggs beaten
  • 1 c whole milk
  • 1 clove garlic pressed
  • 1 ts cayenne pepper
DIRECTIONS
  1. 6 drops of tabasco
  2. 2 eggs beaten
  3. 1 c whole milk
  4. Brush pie crust with mustard, fill crust with tomatoes, mix 1/2 c cheese with pepper and sprinkle on tomatoes,top with basil oregano,parsley and unions, sprinkle with olive oil tabasco mix.
  5. Mix beaten eggs, milk, garlic, cayenne pepper, and rest of pecorino, top with egg mixture.
  6. Preheat oven to 375 F (190 C) and bake pie 45-60 min till golden brown.
  7. Serve warm or cold
