Trail Mix Oatmeal Cookies

  • 2/3 cup softened butter
  • 1 cup packed brown sugar
  • 1 egg
  • 1 1/2 cups rolled oats (not instant)
  • 1 cup flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt

  • Dash almond extract 1/3 cup slivered almonds 1/3 cup raisins
  • 1/3 cup shredded coconut
DIRECTIONS
  1. In a large bowl beat butter with sugar until fluffy.
  2. Beat in the egg.
  3. Add your choice of ingredients from step #1.
  4. In a separate bowl mix oats, flour, baking powder, baking soda and salt.
  5. Stir into butter mixture along with add ins in step #2 until well blended.
  6. Drop by heaping tbsp. about 2” apart onto a greased baking sheet.
  7. Bake in top and bottom thirds of a 375 degree oven for 10 minutes or until golden.
  8. Let cool on pan for about 2 minutes and then transfer to a rack to cool completely.
