Triple Berry Banana Cupcakes

- For Cupcakes:
- Full Box of Dassant Louisiana Banana Bread Mix
- 2 large eggs
- 1/2 cup melted butter
- 1/3 cup milk
- 2 medium mashed bananas
- 1/3 cup blueberries
- 1/3 cup cranberries
- 1/3 cup blackberries
- For Topping:
- 1 cup softened butter
- 1 teaspoon vanilla extract
- 1 to 2 tablespoons whipping cream
- 3 cups powdered sugar
DIRECTIONS
- For Cupcakes:
- Preheat oven to 350°F.
- Line standard muffin pan with decorative paper liners.
- Combine eggs, butter, milk, mashed bananas.
- Add mix, blend together.
- Gently fold in blueberries, cranberries, and blackberries.
- Portion batter into prepared baking tins.
- Bake for 24 to 26 minutes, or until an inserted cake tester comes out clean. Cool completely.
- For Topping:
- Combine soften butter, vanilla extract, and whipping cream.
- Gradually add powdered sugar and whip until creamy and smooth.
- Fill Ziplock® bag, snip off bottom corner, and using a circular motion gently squeeze frosting on each cupcake top.
- Garnish with extra berries on top.
