Tuna Salad with a twist
  • 1 tub (1 cup) store bought pesto
  • Juice of one lemon
  • 2 6-oz cans water packed tuna, drained
  • 4 scallions, cut into thin strips
  • 1 jarred whole roasted red peppers, cut into small pieces
  • Handful of grape tomatoes, halved
  • 1/2 lb medium shell pasta-- cooked al dented, rinsed under cold water & drained well
  • Salt & ground pepper
  1. Place the pesto in large bowl and stir in lemon juice. Add tuna and flake with a fork. Add the scallions, roasted red peppers, tomatoes & pasta and toss the salad to coach evenly. Season to taste with salt & pepper.
