Vegan Chocolate Cupcakes
INGREDIENTS
  • Servings: 18
  • 2 1/2 cups flour
  • 2/3 cup baking cocoa
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 6 tablespoons apple sauce
  • 2 1/4 cups water
  • 1 teaspoon vanilla
  • 2 tablespoons rice or white vinegar
  • 2 teaspoons baking soda
DIRECTIONS
  1. In large bowl, whisk together dry ingredients. In separate bowl combine liquid ingredients. Stir liquid into dry ingredients until blended. Fill nonstick sprayed muffin pans.
  2. Bake in preheated 375ºF oven for 25 minutes. Remove from pan and place on a rack to cool.
  3. Makes 18 cupcakes.
