Vegan Japanese Curry
INGREDIENTS

  • Preparation Time: 15 minutes
  • Rice
  • 2 Carrots
  • 1 Onions
  • Mushrooms
  • 1-2 Potatoes
  • Golden Curry (mild)
  • Arugula (for garnish)
DIRECTIONS
  1. Cook rice according to packaging.
  2. Chop potatoes, carrots, onions, and mushrooms and saute over medium heat for 5 minutes.
  3. Add water and bring to a boil, reduce heat, and simmer until potatoes are soft.
  4. Dissolve Golden Curry cubes into pan. Add more water or cubes for desired consistency.
  5. Plate over or beside a bed of rice, add arugula for color, and warm your soul!
RECIPE BACKSTORY
My mother always made traditional Japanese curry for me and my sister when we were growing up. This is a constant staple now in my own home, and every bite brings me back to my childhood!
