Venison Roast with Gravy

INGREDIENTS
  • 1 venison roast
  • 1 celery stalk, cut into small slivers
  • 3 cloves garlic, sliced thinly
  • 1 onion, sliced
  • 6 slices bacon
  • seasoning salt
  • black pepper, freshly ground
  • 2 cans (10 3/4 ounce) cream of mushroom soup
  • cooked mashed potatoes
DIRECTIONS
  1. 1 Preheat oven to 350 degrees.
  2. 2 Punch several holes in both sides of roast.
  3. 3 Slide celery and garlic into the holes.
  4. 4 Place in a roasting pan, and top with onion.
  5. 5 Cover onion with bacon slices.
  6. 6 Sprinkle with salt and pepper.
  7. 7 Bake covered 20 - 25 minutes per pound.
  8. 8 Remove from oven 30 minutes before roast is done.
  9. 9 Add the mushroom soup around the sides of the roast.
  10. 10 Bake, uncovered, for 30 minutes.
  11. 11 Serve with mashed potatoes.
