Venison or Pork Sausage
INGREDIENTS
  • 15 lbs. venison or 10 lbs pork loin
  • 2.5 lbs. bacon
  • 3 teaspoons garlic powder
  • 1 teaspoon sage
  • 1 1/2 teaspoons Chinese 5 Spice
  • 10 teaspoons Mrs. Dash
  • 1 1/2 teaspoon cayenne pepper
  • 2 tablespoons fennel
  • 3 tablespoons crushed red pepper
  • 12 tablespoons allegro
DIRECTIONS
  1. This is added to 40 oz. of your favorite sausage mix (Astor, Old Plantation, etc.) I link it in casings and convection smoke for 2 hrs @ 250 Deg.
