WORLD'S BEST VEGETABLE BEAN DIP

INGREDIENTS
  • 1 can blackeyed peas (sold on the same shelves as beans!)
  • 1 can pinto beans
  • 1 can black beans
  • 1 can white Shoepec corn (reg can or 2 small) have also used just "white" corn
  • 2 sm jars diced pimento
  • 1 med onion finely chopped
  • 1 cup chopped celery finely chopped
  • 1 cup green pepper finely chopped
  • 2 jalapeno peppers finely chopped
  • 3/4 cup cider vinegar
  • 1/2 cup light olive oil
  • 1 cup sugar
  • 1 tsp salt
  • 1/2 tsp pepper
DIRECTIONS
  1. Rinse, drain and combine blackeyed peas, pinto beans, black beans, Shoepec corn, and diced pimento.
  2. Add the onion, celery, green peper, and jalapeno peppers.
  3. In a sauce pan, bring vinegar, olive oil, sugar, salt, and peper to a boil just long enough to disolve the sugar, then pour over te mixture and allow to marinate before serving.
