Waldorf Salad - Raw Vegan
INGREDIENTS

  • Preparation Time: 30 minutes
  • 1 cup celery
  • 1 1/2 cup peppers, red, yellow
  • 1/2 cup walnuts
  • 1/4 cup onion
  • 1/4 cup raisins
  • 1 apple
  • 1 cup grape tomatoes
  • or tomato cut up
  • 1 avocado
  • 1-2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • shakes of salt and cayenne pepper
DIRECTIONS
  1. Chop all the ingredients into bit size pieces.
  2. Toss in a large bowl.
  3. Add the lemon juice, olive oil, salt, pepper, stir and serve.
  4. How easy is that ?
  5. If you are not serving straight away - hold off on the avocado and cut tomato. Cut and fold them in gently just before serving.
