Walnut Fudge Cake

  • 1 cup walnuts
  • 4 squares unsweetened chocolate
  • 2 cups cake flour, sifted
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon instant coffee granules
  • 1/2 cup butter
  • 1 cup buttermilk
  • 1/4 cup water
  • 3 eggs
DIRECTIONS
  1. Chop walnuts fine; set aside. Melt chocolate in double boiler over hot water. Into a mixer bowl, resift flour with sugar, baking soda, salt and instant coffee. Add butter, buttermilk, water and melted chocolate. Beat on low speed of electric mixer for 2 minutes. Add eggs and beat 2 minutes longer. Stir in chopped walnuts. Turn into 2 greased and floured 9" layer cake pans. Bake 350 degrees for 25-30 minutes or until cakes test done. Let cakes stand in pans for 5 minutes; turn out on wire racks to cool.
