  • 1 (15 oz.) can light red kidney beans OR garbanzo beans (rinsed & drained)
  • 1 (15oz.) can cannellini beans OR navy beans (rinsed & drained)
  • 5 stalks celery diced
  • 1 small red onion diced
  • 1 bell pepper (any color) steamed, seeded & chopped
  • ½ C fresh parsley
  • Dressing Ingredients:
  • 2 Tbsp. Extra Virgin Olive Oil (EVOO)
  • Juice of 1 lemon
  • Salt & pepper to taste
DIRECTIONS
  1. Combine all ingredients and chill for at least 2 hours before serving
