Whipped Butternut Squash
- Servings: 6
- 1 butternut squash, halved and cleaned
- 1/4 cup margarine
- 1/2 cup fat free sour cream (you can use lowfat or regular if you like)
- salt and pepper to taste
- Preheat oven to 350.
- Place butternut squash face down in a baking pan and fill it with enough water to cover the insides. Bake for one hour.
- Scoop insides into a bowl and add margarine, sour cream, salt and pepper. Whip until combined.
- Serves 4-6.
