Whipped Coconut Cream Topper
  • Preparation Time: 30
  • 1-14 oz can coconut milk, chilled overnight
  • 2 T powdered sugar
  • 1/4 tsp vanilla extract
  1. Chill a large mixing bowl and electric beaters in freezer for 20 minutes.
  2. Carefully open the chilled can of coconut milk, spooning the cream from the top; avoid the thin liquid underneath. Beat in the chilled bowl for several minutes to form peaks.
  3. Add sugar and vanilla and continue to beat for an additional minute. Voila!!!
As a child, my parents were always entertaining out-of-town guests; and my Mom would always pay attention to special needs (such as no-dairy) that everyone would love. So here's a whipped cream dessert topping that has no dairy, and is simply delicious!
