Whole wheat chocolate chip muffins

  • 1/2 cup butter {or butter substitute, such as Smart Balance light buttery spread} softened at room temp.
  • 1 cup sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup skim or 2% milk
  • 2 cups organic white whole wheat flour
  • 1/4 cup semi-sweet chocolate chips
DIRECTIONS
  1. Preheat oven to 350
  2. Beat eggs.
  3. Add sugar, baking powder, salt & vanilla. Whisk. Add butter. Beat until fluffy.
  4. Stir in milk.
  5. Slowly fold in flour. Mix until thoroughly moistened.
  6. Add chocolate chips. Mix.
  7. Spoon batter into lined muffin pan, about 3/4 of the way filled. Cook at 350 for aprox 20-30 minutes, or until muffins are a golden brown. Remove from oven and allow to cool. Enjoy!
RECIPE BACKSTORY
Having a picky toddler who seems to crave carbs inspired me to "trick" her into eating some whole wheat as a healthier alternative. You can make these without the chocolate chips as well.
