Yummy Butterscotch Pudding
INGREDIENTS
- Servings: 4 servings
- 1 cup packed brown sugar
- 1/2 cup flour
- 1/2 teaspoon salt
- 2 cups milk
- 3 egg yolks, beaten
- 3 Tablespoons butter
- 1 teaspoon vanilla
DIRECTIONS
- Combine brown sugar, flour and salt in the top of a double boiler, stir in milk gradually.
- Cook until thick; stirring constantly.
- Remove from heat.
- Stir small amount of hot mixture into beaten egg yolks then stir this back into the rest of the original mixture.
- Return double boiler to heat; cook for 2 minutes longer, stirring constantly.
- Add butter and vanilla.
- Place plastic wrap directly on top of pudding if you don't want "skin" to form.
