Yummy Butterscotch Pudding
  • Servings: 4 servings
  • 1 cup packed brown sugar
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 3 egg yolks, beaten
  • 3 Tablespoons butter
  • 1 teaspoon vanilla
  1. Combine brown sugar, flour and salt in the top of a double boiler, stir in milk gradually.
  2. Cook until thick; stirring constantly.
  3. Remove from heat.
  4. Stir small amount of hot mixture into beaten egg yolks then stir this back into the rest of the original mixture.
  5. Return double boiler to heat; cook for 2 minutes longer, stirring constantly.
  6. Add butter and vanilla.
  7. Place plastic wrap directly on top of pudding if you don't want "skin" to form.
This is delicious as pudding or a pie filling.
