ZUCCHINI LEMON MUFFINS

INGREDIENTS
  • 2 cups flour
  • 1/2 cup sugar
  • 1 tbsp. baking powder
  • 2 tsp. grated lemon rind
  • 1/4 tsp. salt
  • 1/4 tsp. grd. nutmeg
  • 1 cup shredded zucchini
  • 3/4 cup skim milk
  • 3 tbsp. oil
  • 1 large egg
  • cooking spray
DIRECTIONS
  1. Preheat oven to 400 degrees.
  2. Combine first 6 ingredients in a bowl; make a well in centre of mixture. Combine zucchini, milk, oil and egg; stir well. Add to dry ingredients, stirring just until moist.
  3. Divide batter evenly among 12 muffin cups coated with cooking spray. Bake for 20 minutes or until golden. Remove muffins from pan immediately; let cool on a wire rack. Yield: 12 muffins
