Zach's Lamb Meatballs

  • Meatballs:
  • 1 lb. ground lamb
  • 2 tsp. ground coriander
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. cayenne pepper
  • 1 tsp. white pepper
  • 1 1/2 tsp. cumin
  • 1/4 c. bread crumbs
  • 1 egg
  • Sauce:
  • 1/4 tsp. saffron
  • 1 14.5 oz can diced tomatoes
  • 1/2 c. red wine
  • 1/4 c. diced red onion
  • 1/2 c. diced yellow (or your preferred color) bell pepper
  • 1/4 c. flour
  • water
DIRECTIONS
  1. Combine all meatball ingredients in a bowl
  2. Form the meatballs to your preferred size and place in crock pot
  3. Add the can of diced tomatoes, red wine, onion and peppers to the crock pot
  4. Cook for 5-7 hours on low
  5. To thicken sauce, mix 1/4 c. flour with a little water to form a paste and mix in
  6. Serve with rice, couscous, or whatever else you prefer!
