Zucchini Chocolate Cake

  • 1/2 cup margarine
  • 1 3/4 cups sugar
  • 1/2 cup sour cream
  • 2 1/2 cups flour sifted
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 cups grated zucchini
  • 1 6oz pkg chocolate chips
  • 1/2 cup oil
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Optional:
  • Cream cheese frosting
  • Powdered sugar for dusting
DIRECTIONS
  1. Blend oil and zucchini with mixer, set aside
  2. In a large bowl cream margarine and sugar
  3. Add eggs, mix well
  4. Add zucchini and vanilla
  5. Add sour cream alternately with rest of ingredients
  6. Pour into greased 9x13 pan
  7. Sprinkle on chocolate chips
  8. Bake at 325 for 40 minutes
  9. Serve plain, dusted with powdered sugar or frosted with cream cheese frosting.
  10. (very rich cake, frosting or topping not really needed)
