Zucchini Pancakes

  • 1/3 cup biscuit baking mix
  • 1/4 cup grated Parmesan cheese
  • 1/8 tsp. pepper
  • 2 eggs, lightly beaten
  • 2 cups shredded zucchini
  • 2 Tbsp. butter
  1. Combine the biscuit mix, Parmesan cheese, pepper and eggs just until blended. Don't overmix. Add the zucchini and mix well.
  2. Melt butter in a large skillet. Drop the batter by about 1/3 cupfuls into hot skillet; press lightly to flatten. Fry until golden brown, about 3 minutes per side. Makes 5 pancakes
