Zucchini Quiche

  • 4 cups thinly sliced, unpeeled zucchini
  • 1 cup coarsely chopped onion
  • 1/2 cup butter
  • 1/2 cup chopped parsley or 2 TBSP dried parsley flakes
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp chopped garlic
  • 1/4 tsp dried oregano
  • 2 eggs, beaten
  • 8 oz. shredded mozzarella cheese
  • 2 tsp dijon mustard
  • Pillsbury pre-made pie crust
DIRECTIONS
  1. Place pie crust on greased 10 inch plate
  2. Trim and pinch edges of pastry
  3. Spread mustard on dough
