carrot and zucchini bread

INGREDIENTS
  • 1 1/2 C flour( all purpose)
  • 3/4 C lt brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 eggs,beaten slightly or 4 egg whites
  • 1/2 cup canola oil
  • 1/2 C grated carrot
  • 1 3/4 C grated zucchini
  • 1/2 C golden raisins
DIRECTIONS
  1. preheat oven to 365 degrees
  2. grease and flour an 8"x3" loaf pan.set aside.
  3. In a medium bowl,combine the eggs and oil. mix well.
  4. sift dry ingredients into large bowl.gently stir the egg mixture into the dry ingredients.Fold the veggies(carrots and zucchini ) and raisins into the above mixture. Pour into loaf pan and bake for 55 min or til cake tester comes clean.( temps vary with ovens)remove from oven,cool 5 min,remove from pan to a cooling rack.cool completely before slicing
