christmas mincemeat sponge cake
INGREDIENTS

  • 8oz self raising flour
  • 8oz butter
  • 8oz caster sugar
  • 1tsp vanilla extract
  • 4 eggs
  • 1 pack butter (250g)
  • 1 box icing sugar (500g)
  • 1tsp vanilla extract
  • 1/2 jar homemade mincemeat
DIRECTIONS
  1. 1- beat butter until light and fluffy
  2. 2- add sugar, flour, eggs and vanilla extract then beat well
  3. 3- divide mixture between two lined sandwich tins and bake for about 25 minutes at 190c or until a toothpick comes out clean
  4. 4- cool completely on a wire rack whilst making the frosting
  5. frosting-:
  6. 1- beat butter and gradually add sifted icing sugar until fluffy and pale
  7. 2- add vanilla and any colouring if desired at this stage and beat again
  8. assembly-:
  9. 1- trim the cakes, place the bottom cake on a serving plate and cover with the mincemeat
  10. 2- place top cake on top
  11. 3- cover with the frosting and decorate as desired
