herby lamb chops with roast vegetables

- 6 lamb chops
- 500g carrots
- 500g new potatoes
- 7 garlic cloves, whole de-skinned
- handful fresh mint leaves
- 1tsp dried rosemary
- olive oil
- salt & pepper
DIRECTIONS
- 1-chop carrots and potatoes into roughly equal sizes so that they cook evenly
- 2-add garlic, mint leaves, rosemary and drizzle with olive oil
- 3- place lamb chops on top of vegetables, add seasoning to taste
- 4- roast in pre-heated oven for 40 minutes
