herby lamb chops with roast vegetables
INGREDIENTS

  • 6 lamb chops
  • 500g carrots
  • 500g new potatoes
  • 7 garlic cloves, whole de-skinned
  • handful fresh mint leaves
  • 1tsp dried rosemary
  • olive oil
  • salt & pepper
DIRECTIONS
  1. 1-chop carrots and potatoes into roughly equal sizes so that they cook evenly
  2. 2-add garlic, mint leaves, rosemary and drizzle with olive oil
  3. 3- place lamb chops on top of vegetables, add seasoning to taste
  4. 4- roast in pre-heated oven for 40 minutes
