lemon and coriander couscous
INGREDIENTS

  • 200g dry couscous
  • 250mls boiling water
  • small bunch coriander leaves
  • 1 lemon
DIRECTIONS
  1. 1- soak the couscous for 10 minutes in boiling water in a pan with the lid on
  2. 2- zest the lemon and roughly chop the coriander leaves
  3. 3- fork through the couscous, add the zest and coriander and mix well
  4. 4- serve
