quinoa with roasted garlic and onions

- 1/2 c quinoa
- 1 cup bottled water
- 4 T roasted garlic
- 1 can diced tomatoes, drained
- 1 yellow onion -diced and caramelized
- 1/2 c grated parmesan reggiano
- 1/2 t ground grains of paradise
DIRECTIONS
- rinse quinoa under cold running water until water is clear
- In a saucepan, combine quinoa and water, simmer for about 15 minutes or until quinoa is softened. Remove from heat and drain
- Combine roasted garlic, diced tomatoes, and caramelized onion, simmering for about 10 minutes with quinoa
- Remove from heat, and add cheese and grains of paradise, mixing well
