soft baked chocolate chip cookies
INGREDIENTS
  • • 1 cup chickpeas
  • • 1 1/2 cup almond milk
  • • 2 eggs or 2 flax eggs (2 tbsp flax mixed with 6 tbsp water
  • • 1/2 cup almond butter
  • • 3 tbsp coconut oil
  • • 1 tsp vanilla extract
  • • 1 and 1/4 cup almond flour
  • • 1/4 and 2 tbsp coconut flour
  • • 4 tbsp stevia powder
  • • 1/2 tsp cinnamon powder
  • • 2 tsp baking powder
  • • 1/4 tsp sea salt
  • • 1/4 cup chocolate chips or chunks
DIRECTIONS
  1. 1. Preheat oven to 350 degrees and line 2 baking sheets with parchment paper.
  2. 2. In a blender, combine the first 6 ingredients until smooth.
  3. 2. Meanwhile, mix the almond flour, coconut flour, stevia, baking powder, and sea salt to combine.
  4. 3. Pour wet ingredients into dry ingredients, and stir to combine.
  5. 4. Finish by folding in chocolate chips or chunks.
  6. 5. Bake for 15 minutes.
