turkey creole
INGREDIENTS
  • 1/2 tablespoon olive oil -- or vegetable oil
  • 1/2 medium onion -- thinly sliced
  • 1/2 small green bell pepper -- cut into strips (red or other
  • color pepper can be used)
  • 1/8 cup celery -- thinly sliced
  • 10 ounces canned tomatoes with green chiles -- such as
  • Ro*tel,1 can
  • 1 1/2 cups cooked turkey -- cut up
DIRECTIONS
  1. Heat oil in 10" skillet over medium-high heat. Cook onion, bell pepper, and
  2. celery in oil about 5 minutes, stirring frequently, until vegetables are
  3. tender.
  4. Stir in tomatoes and reduce heat to low. Simmer uncovered 10 minutes.
  5. Stir in turkey; cover and simmer about 5 minutes or until turkey is hot.
